The farmers who produce the milk for our cheese have lived in these mountains for centuries. Fresh grass, rich herbs and wild mountain flowers grow at these high altitudes. Only the hardiest and most resilient plants thrive in these conditions. Eaten by the cows, the essential nutrients of the herbs are preserved in the milk. This extremely rich and highest-quality raw mountain milk gives our Mountain Milk Cheese its unique tangy, pure and authentic flavor. Just like their ancestors, our milk farmers produce this premium mountain milk according to strict quality standards. Our cheesemakers collect the farm fresh raw mountain milk daily and immediately start the cheese production to preserve the high value of the milk in the cheese. The old recipes are well guarded and handed down from generation to generation. After the artisanal production our cheese makers patiently cure the cheese and allow it to mature until every wheel of cheese has ripened to the peak of its flavor using only traditional artisanal techniques. What makes Mountain Milk Cheese so healthy?
In mountainous areas, the cows' diet contains considerably more grass that in lower-lying areas. That is why mountain milk has been proven to contain lower levels of saturated fats and higher levels of polyunsaturated fatty acids, especially omega-3. The most common type of omega-3 fatty acid found in the milk is linoleic acid.

It has been proven again that the rich herbs that grow in the harsh mountain environment positively impact the concentration of fatty acids in the milk. These plants, which give our Swiss mountain milk its unique taste, improve the animals' fodder intake and are extremely nutritious.

Our raw Swiss mountain milk contains golden hawksbeard (Crepis biennis) and bristly hawkbit (Leontodon hispidus), caraway (Carum carvi) and various plantains (Plantago lanceolata, atrata and alpina) and plants in the Papilionoideae family, such as birdsfoot deervetch (Lotus corniculatus) and red clover (Trifolium pratense), among other plants.

To earn the label "Bergprodukt" (mountain product), the raw materials must be sourced from the mountain region and processed in the mountain region, including the neighboring municipalities. This means that the milk and cheese both need to be produced in the mountain region. Every milk supplier and every cheese dairy is certified, inspected and its authenticity is guaranteed.
