Pumpkin Soup

Ingrédients

  • 800 g pumpkin
  • 200 g carrots
  • 4.5 dl vegetable bouillon
  • 1 red onion
  • 2 cloves of garlic
  • 50 g cashew nuts
  • 1 piece of ginger (approx. 2.5 cm wide)
  • 1 tbsp curry powder
  • 1 tbsp turmeric
  • 100g Jura Montagne

Préparation

  1. Prepare the pumpkin, carrots, onion and garlic cloves, dice them and put them in a pan with all ingredients except the Jura Montagne.
  2. Simmer for 25 minutes, puree.
  3. Crush Jura Montagne into splinters and sprinkle generously over the soup.

Tip: Refine with roasted pumpkin seeds and/or pumpkin seed oil.
